Saffron Sunchoke Soup

Saffron Sunchoke Soup with sautéed shrimp, shitake, and black trumpet mushrooms.
Pickles ramps and fresh parsley.
It was a beautiful Friday when I walked through the Union Square Farmer’s Market on my way to work (which, yes, be jealous, is a daily occurrence). I couldn’t resist buying fresh Sunchokes (aka Jerusalem Artichokes) and Ramps before they were gone for the season.
After peeling, cleaning and slicing the sunchokes, I boiled them in a broth of Chicken Stock, White Wine, Garlic, Lemon Juice & Saffron. Before blending I added a bit of Almond Paste (Crushed Almonds & Water) to thicken the broth. After about 30 minutes I used my awesome DeLonghi Hand Blender and voila – Sunchoke Soup!
Then I just needed to do a quick sauté (garlic & EVOO) of the Shrimp and Mushrooms. I added that to the soup and garnished with pickled ramps (which were made earlier in the week) and fresh parsley!
On a level of 1 (easy) -10 (hard)….I give this a 5. 3 for day of and 2 for prepping & pickling.
