Cold Sesame Noodles

Food Trend: Who doesn’t love cold sesame noodles?
My Inspiration: David and all his friends grew up eating Baumgart’s Sesame Noodles. So I had to recreate their favorite dish! Now it’s a staple recipe.
My Adaptation: I found a Food Network Recipe as a base, but it is really a straight forward dish. The sauce can get really thick, so I reserved and used pasta water to smooth out the sauce and bring together all the flavors.
TIP: If your sauce is too thick, add reserved pasta water to thin it out
Garnish with Cucumbers – they add a cool flavor and a pop of color!

Sesame/Peanut Noodles

Sesame Peanut Noodles - perfect warm, room temp or chilled!

Ingredients
2 boxes Spaghetti (or long pasta of choice)
3 tablespoons dark sesame oil
2 tablespoons peanut oil
4 green onions, thinly sliced on the diagonal
2-inch piece fresh ginger, minced
6 garlic cloves, minced
2 teaspoon red chili paste, such as sambal oelek
4 tablespoons brown sugar
1.5 cups creamy peanut butter
1/3 cup tablespoons rice vinegar
1/3 cup tablespoons soy sauce
1 cup reserved pasta water
1 tablespoon toasted sesame seeds
Cucumber slices, for garnish
Instructions
Cook pasta in a large pot of boiling water over medium heat until al dente. Drain immediately and rinse with cold water until cool. Drain the noodles then toss with sesame oil so they don't stick together.
In a small saucepan, heat the peanut oil over medium-low flame. Add the green onions, ginger, garlic, and chili paste. Cook and stir for a minute until soft and fragrant. Mix in the brown sugar, peanut butter, vinegar, and soy sauce. Stir until the sugar is dissolved and the peanut butter has smoothed out. Slowly add water to thin out the sauce. Toss the noodles with the peanut sauce until well coated. You can add more pasta water here if it is still too thick. Serve at room temperature or chilled. Garnish with the sesame seeds, cucumber slices, and cilantro.
