Bloody Mary Crab Cakes

Food Trend: Bloody Mary’s
My Adaptation: Bloody Mary Crab Cakes. Bloodys & Crab Cakes go great together, so I thought, why not combine them!
Inspiration: Full disclaimer, I LOVE Top Chef, and I follow the chef-testants that I like on twitter. Just after being on Top Chef Masters, Angelo Sosa was opening a new restaurant, Social Eatz (which is now closed). He posted a contest on twitter to submit your “Quick Fire Recipe” to win a seat at his opening night dinner with the chefs from Top Chef Masters. Well I came up with this recipe, and I happened to WIN. The food was good, but the Chef-testants were unfriendly.
Everytime I make this recipe I plate it differently based on my fresh herbs. Here are two examples!

My take on a crab cake!
For the Crab Cake
1lb Jumbo Lump Crab Meat
2-3 Tablespoons of Horseradish
1.5 Teaspoons of Worcestershire Sauce
Juice from ½ a lemon
¼ cup of finely chopped gherkins
1.5 tablespoon of Aged Balsamic
1/3 cup of Roasted Heirloom Tomato Paste
Celery Salt (to taste)
Mayo – if needed
1/2 cup Panko
For the Tomato Tartar Sauce: (Combine together – chill)
1/3 Cup Tomato Paste
1/3 Mayo
3 Tablespoons of Horseradish
Juice from ½ a lemon
¼ cup of finely chopped gherkins
1.5 tablespoon of Aged Balsamic
1.5 Teaspoons of Worcestershire Sauce
Celery Salt (to taste)
Crab Cake Directions
Combine first 8 ingredients to form mixture. The mixture should be medium thick (so it coats a spoon), if it’s too runny add a TINY bit of mayo. Lightly stir in the jumbo lump crab meat as to not break up the meat.
Line a baking sheet with PAM. Using ring molds – I like circular 1 inch molds - Put the crab mixture into the molds, and press down slightly with a spoon so they form a tight mold. Sprinkle panko on the top and bottom of the mold. Chill in the refrigerator for 30 minutes to let the cakes set.
Preheat oven to 350 degrees. Bake crab cakes for around 12-15 minutes.
Serve with Tomato Tartar Sauce, Sauteed Spinach and a Bloody Mary!
